A month or two ago I was in a little cafe and found a salad that I really enjoyed. I have tried to recreate that salad here.
Ingredients
1 cup cooked beluga lentils
1 cup cooked quinoa (whatever colour you prefer)
1/4 cup chopped green onion
1/4 cup cilantro
juice of 1 lime
In a bowl, combine all of the ingredients and mix well.
